lentils


Lentils are a legume, like other types of beans. They grow in a pod that contain either one or two lentil seeds that are round or oval disks. They are quick and easy to prepare and readily take on the flavor of the dishes you add them to.

Why is it good for my body? Small but mighty, lentils are an excellent source of cholesterol- lowering fiber. They also help prevent blood sugar levels from rising rapidly after a meal. Lentils provide seven important minerals, B vitamins, and protein while being extremely low in fat.
Where does it come from? Lentils are believed to be one of the first foods ever cultivated. Originating in central Asia, they spread throughout the Middle East, Africa, and Europe. They continue to be a staple food throughout the world.
How do I store and handle it? Lentils can be found dry or canned. Store dry lentils in an airtight container in a cool, dark place. If purchasing canned lentils, make sure they are free from extra salt or additives. Once cooked, lentils will keep in your refrigerator for up to 3 days.
What are ways to eat it? One great thing about lentils over other dry beans is that they do not need to be presoaked before cooking. Before you wash your lentils, spread them out on something light colored and look for any small stones or debris that need to be removed. Then you can put them in a strainer for rinsing. Lentils are a great substitute for meat in a variety of dishes. Try using them in Doctor Yum's Sloppy Joe Sliders intead of ground meat!
